The restaurant of the Domaine reinvents itself in majesty, with La Table d'Estoublon. The restaurant celebrates more than ever the marriage of Beauty and Goodness, both in the décor and in the refined cuisine of the new chef, Wim Van Gorp.

A voyage through time and flavours

The Domaine's restaurant is reinvented in majesty, with La Table d'Estoublon.

In the vaulted room clad in blond stone, the period carpets and furniture now nestle alongside bold designer touches, noble materials rub shoulders with potted olive trees in an irresistible mix of influences, reflecting the cuisine of the new chef.

Chief Wim Van Gorp 

Originally from Antwerp in Flanders, Wim Van Gorp acquired his haute gastronomie training with the greatest names, Alain Ducasse, Alain Senderens and Joël Robuchon in Paris, Antoine Westermann, Jean-Georges Vangerichten and many others. After Monaco, Paris, Strasbourg and Tokyo, his passion for cooking has now brought him back to the South of France, where his technical mastery and creative virtuosity takes diners on a voyage of new flavours. 

 

On the menu, fresh, local and seasonal products are honored, with the jewels of gourmet Provence, sourced from the best producers: lamb from the Alpilles, pig from the Ventoux, fish from the Mediterranean, rice from the Camargue, citrus fruits from Menton, vegetables from the garden and of course olives from the Domaine... But Wim Van Gorp dares to shake up traditions, punctuating the great classics of Provence with a few inspired exotic nuances, for elegant plates where the finesse of the tastes is revealed with generosity. Ceviche from the garden, lemon-ginger marinade; lamb samoussa, cumin and coriander yogurt sauce; roasted free-range poultry supreme with seeds, chickpea fries and saffron green olive condiment... Delicacies imagined to exalt the red, white and rosé wines of the estate.

The Potager du Domaine

The restaurant's menu is inspired by the harvests of the Domaine's vegetable garden, which supplies it daily. The 24 organic vegetable patches offer a wide range of aromatic plants, vegetables, fruit, berries and flowers... The Chef draws on all his culinary resources to offer dishes with fresh produce, bright colours and delicate aromas.

THE KAMADO

The Kamado or in Japanese " the stove "is a type of barbecue from the land of the rising sun. Hermetically sealed, it is fuelled by olive wood and vines from the estate.

CHEF CHRISTOPHE MICHALAK

Elected World Pastry Champion in 2005, Christophe Michalak sprinkles his talent on the menu of the Table d'Estoublon. Sensitive to the seasonality of products, he offers a relaxed menu that will delight gourmets.

A la carte: chocolate mousse with olive oil from the Domaine and fleur de sel, frosted lemon pie, rice pudding from the Camargue, caramel and orange blossom or simply a nice plate of red fruits.
